Order this locally sourced farm produce to be added to your fridge for arrival:
2 (approx 300g per serving) lamb chops per person from East Lothian outdoor reared lamb
1 pot of mint jelly homemade in East Lothian
A fresh sprig of rosemary from Carfrae Farm’s herb garden

Prep (5 minutes): Thinly slice potatoes, place in a lightly oiled baking tray add salt & pepper, place lamb on top of potatoes, add salt and pepper, lay rosemary on top of lamb, scatter whole small tomatoes around the chops & add optional extras of sliced red peppers and garlic cloves (we prefer to leave skin on the garlic when cooking, just slice one end and when it’s ready it will be perfect consistency that just oozes out the skin – delicious!)
Breathe (30 minutes): Leave everything on the baking tray so lamb chops can breathe at room temperature for 30 minutes,
Oven (25 minutes): Set oven to 200 degrees (allow approx 5 minutes to get oven to temperature) and put chops in the oven for 20 to 25 minutes according to taste.
Serve: Season to taste and serve with lashings of the delicious home made mint jelly as a perfect complement to your lamb chops
